Pork with pasta rice

Ingredients

  • 400
    g
    pork steak or fillet
  • 15
    ml
    each butter and oil
  • 4
    leeks, chopped
  • 5
    ml
    mustard
  • 250
    ml
    pasta rice
  • 300
    ml
    chicken stock
  • 1
    head of broccoli, broken into florets and steamed
  • Parmesan cheese (optional)

Cut the pork into cubes or strips. Heat the butter and oil in a thick-based pan and fry the meat until golden brown.

Stir in the leeks and mustard, and fry for another minute.

Add the rice, stirring until well mixed, then pour in the stock and add the broccoli. Cover and reduce the heat to a simmer (it will take 20-25 minutes for the rice to cook).

Watch the liquid and add more if necessary, and remember to check the seasoning before serving.
