Ingredients (10)

MEAT
45.00 ml cornflour
45.00 ml sherry
45.00 ml soy sauce
2.00 eggs — whites only, lightly beaten
700.00 g pork fillets — cut into 1cm slices
oil
salt and freshly ground black pepper
SAUCE
lemon — zest and juice
30.00 ml soy sauce
470.00 g mango — fresh, peeled, diced or canned, drained, diced

Method:

Blend the cornflour, sherry, soya sauce and egg whites together. Leave the pork slices in the mixture for a few minutes. Pat dry with paper towelling and fry in a little heated oil till just browned on the outside, but still slightly pink inside. Do not fry for too long, otherwise the meat will become dry. Season with salt and pepper if necessary. Remove from the pan and set aside, keeping warm.
Blend all the ingredients for the sauce and pour into the pan. Stir for about 5 minutes till the sauce is hot before adding the meat slices. Heat till warmed through and serve immediately.
Serves 4.
