Ingredients (9)

8.00 pork rib chops — 20mm thick
CHEESE CRUMBLE FILLING
4.00 strips rindless bacon — finely chopped
1.00 onion — small, chopped
50.00 ml cheddar cheese — grated
100.00 ml breadcrumbs — fresh
50.00 ml sour cream — or mayonnaise
10.00 ml wholegrain mustard
1.00 ml salt
freshly ground black pepper — to taste

Method:

Prepare cheese crumble filling: Mix ingredients together.
Prepare meat: Make an incision in each chop to form a pocket, Spoon filling in and secure ends with cocktail sticks or string. Grill chops for 7 to 10 minutes in total (medium) or 10 to 12 minutes in total (well done) 100 mm under a preheated element or in a griddle pan.
Serves 8.
