Pork with cheese crumble filling

    pork rib chops, 20 mm thick
  • CHEESE CRUMBLE FILLING
  • 4
    strips rindless bacon, finely chopped (optional)
  • 1
    small onion, finely chopped
  • 50
    ml
    Cheddar cheese, grated
  • 100
    ml
    fresh breadcrumbs
  • 50
    ml
    sour cream or mayonnaise
  • 10
    ml
    whole-grain mustard
  • 1
    ml
    salt
  • freshly ground black pepper to taste
 

Method

 
Prepare cheese crumble filling: Mix ingredients together. Prepare meat: Make an incision in each chop to form a pocket, Spoon filling in and secure ends with cocktail sticks or string. Grill chops for 7 to 10 minutes in total (medium) or 10 to 12 minutes in total (well done) 100 mm under a preheated element or in a griddle pan. Serves 8.
