Pork with cashews, lime and mint

    sunflower oil

    pork fillets, thinly sliced
  • 90

    cashew nuts, coarsely chopped

    spring onions, sliced
  • 4
    garlic cloves, crushed
  • 1
    piece ginger, grated
  • 4
    red chillies, chopped
  • 3
    limes, grated peel and juice
  • 30
    ml
    fish sauce
  • 45
    ml
    shredded fresh mint
  • 45
    ml
    shredded fresh basil
 

Method

 
Heat the oil until very hot in a large frying pan or wok. Add pork and stir-fry for 2 minutes. Toss in cashew nuts, spring onions, garlic, ginger, chillies, citrus peel and juice, fish sauce, mint and basil and stir-fry for a further minute. Serve with fragrant rice.
