Pork stroganoff

    olive oil

    butter

    pork fillet, cut into strips
  • 2
    onions, sliced
  • 250
    g
    fresh brown mushrooms, sliced
  • 250

    fresh button mushrooms, sliced

    paprika
  • 15
    ml
    Dijon mustard
  • 150
    ml
    white wine
  • 250
    ml
    chicken stock
  • 250
    ml
    sour cream
  • 30
    ml
    chopped fresh parsley
 

Method

Heat 15 ml oil and the butter in a large frying pan and sauté pork in batches until lightly golden. Remove from pan and set aside. Add remaining oil to the pan and cook onions slowly until soft and golden, about 15 minutes. Add mushrooms and paprika and stir-fry for 3 minutes. Add pork, mustard, wine and stock and bring to the boil. Reduce heat and simmer for 10 minutes. Stir in half the cream and season to taste. Garnish with remaining cream and parsley. Serve with a mixture of wild and long-grain rice. Serves 4.
