Ingredients (10)

6.00 leg of pork — slices
150.00 ml flour — cake
sea salt and freshly ground black pepper
oil — for frying
1.00 onion — sliced
1.00 garlic — cloves, crushed
250.00 ml apricot juice
200.00 ml chutney — fruit
50.00 ml tomato sauce
2.00 banana — sliced

Method:

Flatten the pork slices (about 2 cm thick) slightly with a meat mallet. Then cut them into strips. Season the cake flour well with salt and freshly ground black pepper. Roll the meat in the seasoned cake flour and fry in hot oil until golden brown on the outside but without drying out the inside. Drain on paper towelling. Sauté the onion and garlic in a little oil until soft. Add the remaining ingredients, except the bananas, and bring to the boil, stirring every now and then. Add the fried pork strips and bananas and simmer until the dish is warmed through. Serve with spaghetti or rice and a green salad.
