Pork skewers with port marinade

Ingredients

    g
    pork fillet, cubed
  • 2
    chorizo sausages, sliced
  • fresh bay leaves (optional)
  • 45
    ml
    olive oil
  • MARINADE
  • 200
    ml
    port
  • 60
    ml
    white wine vinegar
  • 4
    fresh or dried bay leaves
  • 3
    ml
    ground cinnamon
  • 1
    sprig fresh thyme
  • 5
    cloves garlic, crushed
 

Method

10 to 15 minutes
 
Mix marinade ingredients, add pork cubes and toss to coat.
Marinate for at least 30 minutes.
Thread pieces of meat onto kebab sticks, alternating with a slice of chorizo and a fresh bay leaf between pieces.
Drizzle with olive oil and grill on a griddle pan or under a hot grill for about five minutes on each side, until browned and cooked through.
Serve with potatoes and beans.
