Pork schnitzels with apricots

  • 600
    g
    crumbed pork schnitzels
  • 410
    g
    apricot halves
  • 60
    ml
    butter
  • 30
    ml
    sugar
 

Method

 
Bake schnitzels at 180 ºC for 5 minutes on each side, or fry on both sides in a lightly oiled pan. Drain apricot halves and reserve liquid. Melt butter and sugar together in a small saucepan. Add apricots and cook gently over low heat until apricots are golden brown. Stir in half the reserved liquid. Place apricot halves on top of schnitzels, drizzle a little juice over and serve with broad beans or another vegetable of your choice.
