Ingredients (4)

600.00 g pork — crumbed schnitzels
410.00 g apricots — halved
60.00 ml butter
30.00 ml sugar

Method:

Bake schnitzels at 180 ºC for 5 minutes on each side, or fry on both sides in a lightly oiled pan.
Drain apricot halves and reserve liquid. Melt butter and sugar together in a small saucepan. Add apricots and cook gently over low heat until apricots are golden brown. Stir in half the reserved liquid.
Place apricot halves on top of schnitzels, drizzle a little juice over and serve with broad beans or another vegetable of your choice.
