Ingredients (10)

2.00 onion — sliced
2.00 garlic — cloves, crushed
oil
500.00 g sausages — pork
500.00 g potatoes — peeled
4.00 carrots — medium, scraped
100.00 g peas — fresh
salt and freshly ground black pepper
5.00 ml mixed herbs
400.00 ml stock — chicken

Method:

Preheat the oven to 180 ºC (350 ºF).
Sauté the onions and garlic in a little oil till soft. Turn into a large ovenproof dish.
Boil the sausages in a little water till cooked before frying in heated oil till browned. Arrange on top of the onions.
Slice the potatoes and arrange between the sausages. Cut the carrots into 2 cm pieces and add to the dish. Add the peas.
Season with all the seasonings and add the chicken stock. Bake for 1 hour or till the vegetables are tender and cooked.
Serve with rice.
Serves 4-5.
