Pork sausage and bean casserole

Ingredients

  • 1
    pack of pork sausages
  • 2
    tins of 4 bean mix
  • 2
    tins whole peeled tomatoes
  • 1
    onion
  • 2
    Tbs
    dried mixed herbs
  • 4
    cloves
    garlic
  • 1
    tsp
    garam marsala
  • 1
    small chilli (you can leave out if you wish)
  • 1
    tsp
    brown sugar
  • 6
    potatoes
 

Method

Preheat the oven to 180 ºC.

Place the potatoes in to bake.

Slice the onion and finely chop the garlic and chilli.

Slice the sausages .

Sauté the onion in a casserole dish in a little vegetable oil, when it is soft, add the garlic, garam marsala, mixed herbs and chilli.

Add the sausages and cook for 5 minutes stirring continuously.

Add the tomato tins and break them up with the side of a spoon.

Add the tins of beans, sugar and a good grinding of black pepper and a pinch of salt.

Cover the dish with foil or the lid and place in the oven for 20 mins.

Serve with a steaming baked potato and butter when they are ready.
