Ingredients (9)

2.00 kg pork — deboned rib
115.00 g wholegrain mustard
salt and freshly ground back pepper — to taste
250.00 g apricots — dries, soft and chopped
150.00 g brazil nuts — toasted, chopped
60.00 ml fresh parsley — or sage, chopped
1.00 white bread — loaf, crumbled
2.00 garlic — cloves, finely chopped
150.00 g butter — soft, or margarine

Method:

Preheat the oven to 160 ºC . With the meat side facing up, rub the mustard, salt and pepper into the meat. Mix the apricots, nuts, herbs, crumbs and garlic. Add the butter or margarine and mix to form a dry paste. Spread over the meat and roll up. Secure the roll with string and score the rind and fat, taking care not to slice through to the meat, Oven roast the pork roll for 50 minutes per kilogram about 1 1/2 hours) plus an extra 25 minutes until the meat is done. Rest for 10 minutes, slice thinly and serve.
