Pork roll with apricot and pecan nut

    deboned pork rib
  • 115
    g
    wholegrain mustard
  • salt and freshly ground black, pepper to taste
  • 250
    g
    soft dried apricots, chopped
  • 150
    g
    Brazil nuts, toasted and chopped
  • 60
    ml
    fresh parsley or sage, chopped
  • 1
    loaf white bread, crumbled
  • 2
    cloves garlic, finely chopped
  • 150
    g
    soft butter or margarine
 

Method

+/- 2 hours
 
Preheat the oven to 160 ºC . With the meat side facing up, rub the mustard, salt and pepper into the meat. Mix the apricots, nuts, herbs, crumbs and garlic. Add the butter or margarine and mix to form a dry paste. Spread over the meat and roll up. Secure the roll with string and score the rind and fat, taking care not to slice through to the meat, Oven roast the pork roll for 50 minutes per kilogram about 1 1/2 hours) plus an extra 25 minutes until the meat is done. Rest for 10 minutes, slice thinly and serve.
