Ingredients (11)

5.00 ml salt
3.00 ml freshly ground black pepper
2.00 ml dried thyme
2.00 ml cloves — ground
5.00 ml coriander — ground
3.00 kg leg of pork — rind removed
45.00 ml oil
1.00 onion — sliced
2.00 garlic — large cloves, crushed
250.00 ml french salad dressing

Method:

Mix salt and all the spices together and rub over the leg of pork.
Heat the oil in a heavy-based saucepan large enough to hold the leg of pork and fry the onion and garlic until glossy.
Place the leg of pork on top, round end facing down, and brown. Turn and brown on the other side. Pour over the salad dressing, cover and reduce the heat. Pot roast for about 2 to 2 1/4 hours or until the meat is tender and done.
Add the vegetables to the leg of pork half an hour before the end of the cooking time and heat until just done. Serve with the vegetables, mango sauce and harlequin rice salad.
