Ingredients (11)

FILLING
15.00 ml butter
1.00 onion — small, chopped
1.00 garlic — small cloves, crushed
60.00 g button mushrooms — finely chopped
100.00 ml breadcrumbs — fresh
2.00 ml dried thyme
cayenne pepper — pinch
1.00 ml salt
freshly ground black pepper — to taste
160.00 ml mozzarella cheese — grated
3.00 pork fillets

Method:

Melt the butter and sauté; the onion and garlic until fragrant. Add the mushrooms and sauté; until tender.
Remove from the heat and add the crumbs, thyme, cayenne pepper, salt and black pepper. Cool completely before adding the cheese.
Make a horizontal slit in each fillet but do not cut all the way through. Fold open and flatten the fillets slightly with the palm of your hand.
Fill each fillet with a third of the mixture, fold over and secure with string or cocktail sticks.
Cook over medium coals until just done, brushing frequently with the braai sauce (see recipe).
Slice and serve with a salad.
