Pork fillet wrapped in bacon with sugared apples

250.00 g bacon — streaky
2.00 pork fillets
salt
black pepper — freshly ground
30.00 ml fresh chillies — 573
20.00 ml sugar
2.00 apples — red, halved
fresh sage — fried
leaves for garnishing

Method:

Preheat oven to 200 ºC. Wrap 125 g bacon rashers around each pork fillet. Rub with seasoning and olive oil. Heat an ungreased, heavy-based frying pan until very hot. Brown and seal pork fillets for 1 minute on each side. Transfer fillets to a roasting pan. Sprinkle sugar over apple halves and add to roasting pan. Roast for 20 minutes. Remove meat from roasting pan and allow it to rest for 5 minutes in a warm place. Place the apples under a hot grill until sugar caramelises. Halve each fillet and serve with sugar-crusted apples, garnished with sage leaves.
