Pork fillet with tomato sauce

Ingredients (10)

SAUCE
1.00 onion — sliced
2.00 garlic — large cloves, crushed
5.00 ml fresh ginger — grated
1.00 fresh chillies — deseeded and chopped
30.00 ml tomato sauce
15.00 ml vinegar — wine
150.00 ml stock — chicken
2.00 pork — fillets
salt and freshly ground black pepper — to taste
oil — and butter for frying

Method:

Sauté the onion, garlic, fresh ginger and chilli in oil till soft and glossy. Add the tomato sauce and wine vinegar and stir-fry till well blended. Add the chicken stock, reduce the heat and simmer till a thick sauce has formed.
Season the pork fillets with salt and pepper and brown on the outside in a mixture of heated oil and butter. Add the sauce, reduce heat and simmer till done, but still slightly pink on the inside – about 7 minutes. Slice fillets and serve with the sauce and rice.
Serves 4-6.
