Pork fillet with ginger and honey

Ingredients (10)

500.00 g pork — fillet, cubed
2.00 garlic — cloves, crushed
15.00 ml fresh ginger — finely shredded
30.00 ml sunflower oil
30.00 ml lemon juice
60.00 ml honey
45.00 ml soy sauce
300.00 g green beans — baby, topped and tailed
7.00 ml cornflour
45.00 ml sherry

Method:

Place pork cubes, garlic and ginger in a bowl and set aside for 5 minutes.
Heat oil in a wide, heavy-based or cast-iron frying pan over high heat and fry pork for 2 minutes on each side. Remove and set aside.
Add lemon juice, honey, soy sauce and green beans to pan and cook for 3 minutes, or until beans are done to taste.
Mix cornflour to a paste with sherry and add to pan with pork. Heat until sauce is slightly thickened and glossy. Serve with fragrant rice.
