Pork fillet with chicken liver

    whole pork fillet
  • salt and black pepper to taste

    chicken livers, cleaned

    fresh button mushrooms, sliced

Make a slit in the pork fillet and lightly season the inside with salt and black pepper. Fry the chicken livers in a little oil till just done but still slightly pink inside. Stuff the pork fillet with the chicken livers and secure the opening with cocktail sticks. Wrap the bacon round the pork fillet and season well with salt and pepper. Grill over the fire till just done or fry in a heated cast-iron pan. Fry the mushrooms in a little heated oil till brown. Add the sour cream and simmer till the sauce thickens slightly. Season to taste with salt and black pepper. Serve with the fillet. Serves 4.
