Pork fillet roasted with honey and spices

    pork fillet
  • 50
    ml
    honey
  • 65
    ml
    light soy sauce
  • 30
    ml
    olive oil
  • 1
    orange, juice and grated peel
  • 2
    cloves garlic, crushed
  • 5
    ml
    minced ginger
  • 5
    ml
    each ground cumin and coriander
  • 5
    ml
    chicken stock powder
  • 4
    pods star anise (optional)
 

Method

 
Wipe fillet with a damp cloth and place in a medium-size casserole dish. Mix remaining ingredients and pour over meat. Roast at 180 ºC for 20 to 25 minutes, turning and basting occasionally. Serve with sultana and almond-studded couscous (see recipe).
