Pork curry

  • 750
    g
    pork, cubed
  • olive oil
  • 2
    large onions, chopped
  • 1
    garlic clove, finely chopped
  • 25
    ml
    mild curry powder
  • 410
    g
    (1 can) chopped tomatoes
  • 250
    ml
    apricot juice
  • 1
    apple, peeled, cored and diced
  • 50
    g
    sultanas
  • 3
    bay leaves
  • salt, pepper and sugar
 

Method

 
Brown the meat in the oil and remove from the pan.
Sauté the onions and garlic in the pan fat until soft.
Add the curry powder and cook until fragrant.
Add the tomatoes, juice, apple, sultanas and bay leaves along with the meat.
Cover and simmer over low heat for about one hour or until the meat is tender.
Season to taste with salt, pepper and sugar, remove the bay leaves and serve with rice, mashed potatoes or pasta.
