Pork chops with spinach and Parmesan cheese filling

Ingredients (7)

8.00 pork sausages — thick
0.50 onion — grated
2.00 garlic — cloves, crushed
0.00 fresh chillies — 573
500.00 g spinach — frozen
100.00 ml parmesan cheese — grated
0.00 salt and freshly ground back pepper

Method:

Make an incision in the meaty part of each chop, right up to the bone to form a pocket.
Stir-fry the onion and garlic in a little heated olive oil until tender.
Add the spinach and stir-fy until all the moisture has evaporated. Remove from the heat and add the Parmesan cheese.
Season to taste with salt and freshly ground black pepper.
Spoon a little of the filling into each pocket and secure with a cocktail stick.
Brush the chops with olive oil and season with salt and pepper.
Braai over medium-hot coals until done.
