Boil the potatoes in salted water until tender.
In the mean time, season the pork chops and grill for 5 minutes one ach side.
Drain the potatoes and return to the pot.
Add the mustard, olive oil and lemon juice. Mash roughly.
Serve with the chops and some wilted greens.
