Pork chops with apple cider

    olive oil

    pork loin chops, trimmed of excess fat
  • 2
    red-skinned dessert apples, cored and sliced
  • 600

    chopped sage

    thick cream
  • salt and freshly ground black pepper
  • sage leaves to garnish


Heat oil in a large, heavy-based or gridded frying pan. Place chops in the hot oil and fry, turning once, for 10 minutes, or until sealed and browned. Add the apples and cider to the pan, stirring well. Reduce heat to a simmer and cook for 25 minutes, turning the chops once, halfway through cooking time. Carefully stir the freshly chopped sage into the cream, and pour the mixture into the pan. Season and stir thoroughly. Increase the heat and cook for a further 10 minutes or until the sauce has reduced by half. Arrange on a serving plate, and garnish with fresh sage. Serve with fresh vegetables.
