25.00 g coconut
1.00 lemon juice
60.00 ml yoghurt — natural
1.00 red chilli — small, finely chopped
1.00 garlic — cloves, crushed
30.00 ml olive oil
2.00 pork loin chops
lemon — wedges and fresh coriander, to garnish

Method:

Place the coconut (soaked in 15 ml boiling water to soften) and strained lemon juice in a small bowl. Cook on MEDIUM for 1 1/2 minutes to melt. Add the yoghurt, chilli, garlic and 15 ml of olive oil, mix well.
Place pork chops on a plate and spoon over the marinade. Leave to marinate for at least 30 minutes, turning occasionally.
Preheat a microwave browning dish for about 10 minutes on HIGH. Add the remaining olive oil and cook on high for 1 minute.
Add the pork chops to the browning dish and turn to seal on both sides. Cook on HIGH for 4 to 6 minutes, turning once. Leave to stand, covered, for 2 minutes before serving.
Garnish with lemon wedges and coriander leaves, and serve with baby corn and carrots.
