    lean pork chops
  • 2
    juice and zest of lemon
  • 30
    ml
    orange juice
  • 3
    sprigs fresh thyme or rosemary
  • 15
    ml
    olive oil or olive oil spray
  • 5
    ml
    salt
  • 5
    ml
    pepper
 

Method

Place pork chops in a shallow dish and pour in lemon juice and zest, orange juice and herbs.

Add a little garlic if you like and allow flavours to infuse for at least 30 minutes.

Heat a non-stick pan and brush with olive oil or coat with olive oil spray.

Add chops to the pan, season well, and allow to sear for about 2 minutes a side. Add reserve marinade ? except herbs ? and fry until done, about 10?12 minutes.
