Ingredients (12)

45.00 ml oil
750.00 g pork — lean, diced
1.00 onion — large, wedges
2.00 carrots — diced
2.00 turnips — small, cubed
2.00 ml cumin — ground
5.00 ml turmeric
5.00 ml coriander — seeds
2.00 garlic — cloves, crushed
30.00 ml flour — cake
450.00 ml stock — vegetable
sea salt and freshly ground black pepper

Method:

Preheat the oven to 180 ºC and lightly butter a casserole dish. Heat a large saucepan and add the oil. Brown the pork cubes, a few at a time. Remove from the saucepan and set aside.
Stir-fry the vegetables in the remaining oil until lightly browned and stir in the spices, garlic and cake flour. Mix well. Pour over the stock and season with black pepper. Bring to the boil and spoon into the casserole. Taste and season with salt if necessary. Cover and bake for about 1 to
1 1/4 hours until tender. Cool slightly and serve with white rice and buttered green vegetables.
Serves 4-5.
