Pork burgers with chilli sauce

    minced pork

    slices bread

    milk
  • 1
    onion, finely chopped
  • 2
    cloves garlic, finely chopped

    chopped parsley
  • 3
    eggs

    tomato paste
  • 15
    ml
    mustard powder
  • salt and pepper
  • marjoram
  • 250

    dried crumbs
  • oil for frying
  • SAUCE
  • 5
    ml
    oil
  • 2
    chillies, seed removed and sliced into strips
  • 1
    onion, sliced into rings
  • 125
    ml
    meat stock
  • 125
    ml
    cream
  • salt and pepper
  • lemon juice
 

Method

 
Place the mince in a mixing bowl. Remove the bread crusts and soak the bread in the milk. Add to the meat with the onion, parsley, garlic, eggs, tomato paste, mustard powder and seasonings to taste. Mix well. Shape into 8 flat burgers and roll in the dried crumbs. Chill. Heat oil in a pan and fry the burgers until done (they can also be grilled). Meanwhile make the sauce. Heat the oil and fry the chillies and onion. Add the stock and cook until the onion and chillies are soft. Add the cream and simmer until some of the liquid has evaporated. Season with salt and pepper and a little lemon juice. Place in a food processor and process. Serve with the pork burgers.
