Pork and sweet potato stuffing

    sweet potato
  • 500

    pork sausages
  • 250
    g
    chorizo or Russian sausages
  • 2
    onions, finely chopped
  • 2
    sticks celery, finely chopped
  • 30
    ml
    cooking oil
  • 60
    ml
    chopped fresh parsley
  • 30
    ml
    chopped fresh coriander
  • 2
    apples, grated
  • salt and freshly ground black pepper
  • 5

    cumin
  • 15
    ml
    origanum
  • 200
    g
    fresh breadcrumbs
  • 125
    ml
    chicken stock
  • 1
    lemon (grated rind and juice)
 

Method

 
1. Boil and mash the sweet potato. 2. Remove the pork sausages from their casings. 3. Skin the chorizo and dice. 4. Sauté the onion and celery in the oil. 5. Mix all the ingredients together.
