Pork and sauerkraut casserole

    fairly thick pieces of pork rib, deboned and cut into pieces
  • 1
    onion, chopped
  • 30
    ml
    oil
  • 250
    ml
    roughly chopped carrots
  • 250
    ml
    water
  • 1
    bay leaf
  • 15
    ml
    salt
  • freshly ground black pepper to taste
  • 400
    g
    (1 can) sauerkraut, drained
  • 2
    red apples, peeled and diced
  • 125
    ml
    apple juice
  • 30
    ml
    chopped fresh parsley
  • 15
    ml
    sugar
 

Method

 
Fry the meat and onion in the oil until the onion is tender.
Add the carrots, water, bay leaf, salt and pepper.
Reduce the heat, cover and simmer until the meat is tender.
Add the sauerkraut, apples, apple juice, parsley and sugar.
Cover and cook until the apples are soft.
Serve with potatoes and a salad.
