Pork and rice stir fry

    oil

    smoked pork rashers, diced
  • 2
    leeks, chopped
  • 1
    garlic clove, cut into fine strips
  • 1
    thumb-sized piece of ginger, chopped
  • 1
    red chilli, deseeded and chopped
  • 250

    mushrooms, chopped
  • 2
    cup
    cooked rice, cooled
  • 4
    jumbo eggs
  • 15
    ml
    soy sauce
  • 5
    ml
    fish sauce
 

Method

Heat a wok or frying pan, add the oil and fry the pork strips for 2-3 minutes until golden brown. Add the leeks, garlic, ginger, chilli and mushrooms, and stir-fry for another 2-3 minutes until the mushrooms are browned.

Stir the rice through until combined and heat through. Scrape the stir-fry to the side of the wok then break the eggs into the pan, one by one.

Stir-fry until cooked and then stir into the rice mixture. Drizzle soy and fish sauce over, and serve immediately.
