Pork and pineapple stew

    onion, finely chopped

    green pepper, seeded and cut into pieces

    clove garlic, finely chopped

    fresh ginger, finely grated

    whole clove
  • 1
    cinnamon stick
  • 1
    bay leaf

    mild curry powder
  • 250
    ml
    uncooked rice
  • 440

    pineapple chunks
  • 30
    ml
    wine vinegar
  • 500
    ml
    chicken stock
  • salt and freshly ground black pepper to taste
 

Method

+/- 1 hour
 
In a heavy-based saucepan, brown the meat in a little oil. Add the onion, green pepper, garlic, ginger and whole spices and fry lightly. Add the curry powder and stir-fry for one minute. Add the rice and mix. Add the pineapple chunks and syrup, stock and vinegar. Reduce the heat, cover and simmer for about 45-60 minutes or until the meat and rice are tender and most of the liquid has been absorbed. Season to taste with salt and freshly ground black pepper. Serve with chutney and fried banana slices if desired. Serves 4-6.
