Ingredients (15)

500.00 g pork — cubed
oil
1.00 onion — finely chopped
1.00 green pepper — deseeded and chopped
1.00 garlic — cloves, finely chopped
15.00 ml fresh ginger — finely grated
1.00 cloves — whole
1.00 cinnamon — stick
1.00 bay leaves
30.00 ml curry powder — mild
250.00 ml rice — uncooked
440.00 g pineapple — cut into chunks
30.00 ml vinegar — wine
500.00 ml stock — chicken
salt and freshly ground black pepper — to taste

Method:

In a heavy-based saucepan, brown the meat in a little oil. Add the onion, green pepper, garlic, ginger and whole spices and fry lightly. Add the curry powder and stir-fry for one minute. Add the rice and mix. Add the pineapple chunks and syrup, stock and vinegar. Reduce the heat, cover and simmer for about 45-60 minutes or until the meat and rice are tender and most of the liquid has been absorbed. Season to taste with salt and freshly ground black pepper. Serve with chutney and fried banana slices if desired.
Serves 4-6.
