Ingredients (12)

1.00 pineapple — small
10.00 ml peanut oil — or sunflower oil
1.00 garlic — cloves, crushed
1.00 fresh chillies — deseeded and chopped
12.00 fresh coriander — chopped
45.00 ml peanuts — salted, chopped
15.00 ml anchovy paste
15.00 ml soy sauce
175.00 g mince — pork
15.00 ml water
black pepper — freshly ground
fresh coriander — to garnish

Method:

Cut the pineapple into wedges. Cut out the cores and cut the flesh from the skin. Set aside.
Heat the oil in a wok or large frying pan over a medium heat. Add the garlic and chilli and stir-fry until softened, do not brown.
Add the coriander, peanuts, anchovette, soy sauce and continue cooking, stirring occasionally until thickened.
Mix the cooked anchovette mixture into the pork mince and divide between the pineapple wedges.
Place on a baking tray and bake at 180 ºC for 15 to 20 minutes.
Garnish with coriander and serve hot or cold.
