Pork and pepper curry

    freshly chopped ginger

    finely chopped lemon grass
  • 15

    grated lemon rind
  • 4
    red chillies, chopped

    salt

    vegetable oil

    pork fillet, sliced into strips
  • 30

    fish sauce
  • 5
    ml
    sugar
  • 30
    ml
    roasted peanuts
  • 2
    medium red peppers, sliced
 

Method

Blend ginger, lemon grass, lemon rind, chillies and salt together in a food processor or pestle and mortar to form a paste. Heat oil in a large frying pan. Stir in curry paste and fry for 1 minute. Add pork strips and stir-fry over high heat for 1 minute. Add all remaining ingredients and continue to fry for 2 minutes. Serve immediately.
