Pork and bean stew

    good quality, spicy pork sausages
  • 3
    cloves of garlic, crushed
  • 1
    big onion, chopped
  • olive oil
  • 2
    tins of beans
  • 1
    tin of chopped tomatoes
  • fresh thyme and parsley
  • a glass of red wine
  • salt and pepper
  • 1
    sugar just to cut through acidity of tomato
  • 1
    chili - optional
  • fried breadcrumbs or pork crackling

Remove the meat from the casings and shape into tiny little meatballs.
In a "cassole" or pot, heat the olive oil and fry the meatballs until they are golden brown on all sides. Set aside and keep warm.
In the same pot, sauté the onions and garlic until soft. Add more olive oil if you need to.
Add the tomato, red wine and thyme and allow to cook for about 5 minutes, just to reduce the sauce somewhat.
Add the beans and the meatballs and warm through.
Serve with chopped parsley, fried breadcrumbs or crackling if you have.

To make the fried bread crumbs:
Heat some olive oil to a pan, add 1-2 cloves garlic, crushed.
Now add about 1 cup fresh breadcrumbs and toss until it becomes golden in color.
Season with a little salt.
