Pork roast with a pomegranate glaze

Ingredients

 
  • 1-2
    pork belly roasts, depending on size
  • olive oil
  • coarse salt or salt flakes
  • 1
    jar pomegranate glaze (or other ready-made glaze of your choice)
  • 1
    tub pomegranate seeds (optional)

Method

 
Preheat oven to 180°C.

Brush the pork roasts with oil and then sprinkle with a little coarse salt. Place into a roasting tin and roast in a preheated oven for 30 minutes per 500g.

Remove the pork from the oven. Brush the glaze over the meat. Continue to roast, basting once during the cooking time, for another 25 minutes or until the core temperature reaches 80oC.

Remove from the oven and set aside for 10 minutes before carving. Sprinkle with pomegranate seeds, if using.
