Ingredients (12)

30 ml sunflower oil
2 eggs — large, slighly beaten
2 cloves garlic — cloves, crushed
20 ml fresh ginger — grated
500 g pork — mince or finely chopped schnitzel
4 spring onions — sliced
500 ml rice — white, cooked
2 carrots — peeled and julienned
125 ml peas — frozen
30 ml soy sauce
20 ml vinegar — white wine or rice
fresh coriander — to serve

Method:

Heat half the oil in a wok and add the egg. Fry over high heat, stirring constantly to break the egg up into small pieces. Remove the egg from the wok and set aside.

Heat the remaining oil and add the garlic and ginger. Fry for one minute, and then add the pork and stir-fry until cooked.

Add the remaining ingredients and stir-fry until heated through and the peas are cooked. Taste for seasoning and add a little more soy sauce if necessary. Serve immediately with coriander, if you prefer.
