    onion, finely chopped

    cloves garlic, crushed

    hot curry powder

    turmeric

    whole peeled tomatoes, chopped

    leg of pork, cubed

    parsley, finely chopped

    large piece stick cinnamon

    whole cloves

    dried curry leaves

    ml
    white grape vinegar
 

Method

Sauté the onion and garlic in a little oil until tender. Add the curry powder and turmeric and stir-fry for one minute. Add the tomato and simmer until a thick puree is formed. Season the meat cubes with salt and brown in a little oil. Add the tomato mixture and remaining ingredients. Simmer for about 40 minutes or until the meat is tender. Season to taste. Serve with rice. Serves 4-6.
