Porcupine meatballs

    mince

    uncooked rice

    small onion, finely chopped

    finely chopped parsley

    thyme
  • pinch nutmeg
  • salt and freshly ground black pepper

    tomato soup
  • 5
    ml
    basil
 

Method

 
Mix the mince with the uncooked rice. Add the onion, parsley, thyme and nutmeg and season to taste with salt and pepper. Mix and shape into small balls, slightly smaller than a walnut. Pour the tomato soup into a deep saucepan and sea son to taste with salt, pepper and basil. Add a can of water and bring the sauce to the boil. Place all the meatballs in the sauce and simmer until the meatballs and rice are cooked. Add extra water if necessary. Serve the meatballs with the sauce. Makes 50 small meatballs. Serves 6-8.
