150.00 g porcini mushrooms
1.50 kg potatoes — Mediterranean
1.00 Litres water — boiled
125.00 g butter
1.00 pinch salt — ground
1.00 hand fresh basil

Method:

Laat week die porcini-sampioene in die gekookte water vir sowat 30 minute. Skil die aartappels en sny in kwarte. Dreineer die sampioene deur ‘n sif, maar hou die water. (Dit sal so ‘n donkerbruin kleur wees.) Smelt die botter in ‘n groot pan. Braai die geweekte sampioene vir sowat 2 minute. Voeg die vloeistof van die geweekte sampioene by en laat kook vir so 7 minute. Gooi die aartappels by en meng goed. Laat alles saamkook oor ‘n lae hitte vir 20 minute. Verhit die oond tot 190 °C. Gooi die sampioen-en-aartappelmengsel met al die sous in ‘n groot oondbak. Geur met growwe sout en laat rooster vir sowat 30 minute in die oond. Maak seker die aartappels is sag. Haal uit en breek ‘n hand vol vars basiliekruid oor.
