    cake flour

    salt

    baking powder

    eggs, lightly beaten

    oil
  • 200
    ml
    milk
  • 60
    ml
    oil to grease pans
  • 250
    g
    fresh strawberries
  • TO SERVE
  • icing sugar
  • 100
    g
    chocolate, melted
  • 125
    ml
    cream, whipped
 

Method

 
1. Sift flour, salt and baking powder into a bowl. Stir in eggs and oil. 2. Mix in the milk. Do not overmix. Leave mixture to stand for 20 minutes. 3. Pour 5 ml of the oil into each muffin pan and heat in preheated 190 ºC oven until beginning to smoke. 4. Remove the pan from the oven and pour the batter into the pans, dividing the mixture evenly between them. Return to the oven quickly. 5. Bake for 25 minutes until puffed up and golden brown. Remove from oven. TO SERVE 6. Fill each pop-over with whole strawberries, dust with icing sugar, drizzle on melted chocolate and serve with whipped cream. Makes 12.
