Poor man's paella

Ingredients

    Russian sausages, sliced
  • 250
    g
    leftover chicken, diced
  • oil
  • 1
    large onion, finely chopped
  • 7
    ml
    mild curry powder
  • 375
    ml
    cooked, leftover rice
  • 500
    g
    cooked haddock, flaked
  • 2
    hard-boiled eggs, chopped
  • 125
    ml
    frozen peas
  • 125
    ml
    frozen whole kernel corn
  • 2
    eggs, beaten
  • 125
    ml
    milk
  • salt and freshly ground black pepper
 

Method

20-30 min
 
Fry the sausages and chicken (if not cooked) in a little oil till brown. Remove from the pan and set aside. Fry the onion till soft, add the curry powder and stir-fry for another minute. Add the rice and stir-fry. Return the sausages and chicken to the pan and mix lightly. Add the flaked haddock, hard-boiled eggs, peas and corn and mix lightly. Blend the beaten eggs and milk, stirring well. Pour over the paella and stir-fry till the eggs are done and set. Serve immediately. Serves 8-10.
