    kg
    potatoes
  • 150
    g
    butter
  • salt and white pepper
  • freshly grated nutmeg
 

Method

 
Peel and thinly slice the potatoes, and keep them in cold water. Thickly butter either a round fireproof glass dish or a heavy cast-iron frying pan. Drain and dry slices very well. Arrange them, overlapping neatly, with plenty of seasoning and butter between layers. Dot top with remaining butter and cover. Cook on stove plate until bottom is golden brown. Continue cooking in a preheated 220 ºC oven until cooked. Turn out onto a plate and serve hot. As an alternative, add grated cheese between layers.
