Ingredients (13)

2.00 onions — large
2.00 carrots — large
50.00 g butter
1.00 kg mince
1.00 fresh parsley — bunch
2.00 eggs
salt and freshly ground black pepper
12.00 baby onions
50.00 g butter
125.00 ml water
250.00 ml cream
250.00 ml wine — dry white
1.00 stock cube — beef, crumbled

Method:

Chop onions and dice carrots. Fry in butter and a little water for 20 minutes.
Place minced meat (made up of one quarter each pork, veal, beef and lamb or ox brains) in a bowl and add fried vegetables.
Clean and chop parsley and add to mixture. Add eggs, salt and pepper, and mix thoroughly.
Grease a large ovenproof dish, and mould loaf on it, leaving at least 5 cm free all around it.
Fry baby onions in butter, add water, cover and simmer for 20 minutes. Place onions around meat, add cream, white wine and stock, and bake at 220 ºC for 45 minutes.
TOTAL KILOJOULE COUNT: 16 415 kJ (3 925 Cal). A portion: 4 105 kJ (980 Cal).
