Ingredients (11)

600.00 ml water
150.00 g maize meal — polenta
25.00 ml butter
salt and freshly ground black pepper
250.00 g feta cheese
60.00 g rocket
100.00 g green beans — blanched
45.00 ml fresh chillies — 573
15.00 ml vinegar — balsamic
100.00 g bacon — diced, fried
0.00 cucumber — English variety, peeled, thinly sliced

Method:

Heat water in a saucepan, pour in polenta and beat well for 2 minutes, or until smooth. Simmer until thick, stirring constantly. Add butter and season.
Pour into a 20-22 cm diameter greased ovenproof dish and leave to set.
Crumble cheese over and grill until cheese melts. When cool, cut into slices.
Place rocket and green beans in a bowl, drizzle with olive oil and vinegar. Arrange polenta slices on top, sprinkle with bacon bits and arrange cucumber slices on top. Serve.
