Polenta salad with feta cheese

    ml
    water
  • 150
    g
    polenta
  • 25
    ml
    butter
  • salt and milled pepper
  • 250
    g
    feta cheese
  • 60
    g
    rocket
  • 100
    g
    green beans, blanched
  • 45
    ml
    olive oil
  • 15
    ml
    balsamic vinegar
  • 100
    g
    bacon, diced and cooked until crisp
  • English cucumber, peeled and thinly sliced
 

Method

 
Heat water in a saucepan, pour in polenta and beat well for 2 minutes, or until smooth. Simmer until thick, stirring constantly. Add butter and season. Pour into a 20-22 cm diameter greased ovenproof dish and leave to set. Crumble cheese over and grill until cheese melts. When cool, cut into slices. Place rocket and green beans in a bowl, drizzle with olive oil and vinegar. Arrange polenta slices on top, sprinkle with bacon bits and arrange cucumber slices on top. Serve.
