    Litres
    water
  • 5
    ml
    salt
  • 250
    g
    polenta
  • 50
    g
    butter
 

Method

 
Bring the water to the boil in a 5 litre pot. Add the salt, then pour in the polenta in a steady stream. Cook over a very low heat, stirring constantly, until it pulls away from the sides of the pot (about 8 minutes). Add the butter. Remove from the heat and beat until the polenta holds its shape. Season to taste.
