Poached salmon trout

  • 1
    large fillet of salmon trout
  • reserved liquid from marinated mussels (see recipe)
  • 125
    ml
    dry white wine
  • 25
    ml
    lemon juice
  • salt and pepper
 

Method

 
1. Place all the ingredients in saucepan and cover the salmon trout, cut into four portions, with a sheet of buttered paper. Place the lid on top and heat gently for about 10 minutes or until the fish is done. Transfer fish to plates and surround with spring vegetables and fried new potatoes.
