Poached pears with cinnamon and orange cream

    firm, ripe pears, peeled, halved and cored, retaining stalks

    cinnamon stick
  • 1
    ml
    vanilla essence
  • 30
    ml
    sugar
  • 1
    each, orange and lemon, strip of peel
  • 250
    ml
    water
  • 250
    ml
    fresh orange juice
  • TOPPING
  • 125
    ml
    thick cream
  • 2
    ml
    cinnamon
  • 5
    ml
    honey
  • 1
    small orange, thinly sliced peel
 

Method

 
Place pears, cinnamon stick, essence, sugar, strips of orange and lemon peel, water and orange juice in a saucepan. Bring to boil, reduce heat and simmer for about 10 minutes, or until pears are cooked through but still firm. Remove pears and set aside. Bring liquid to boil, and cook, uncovered, until reduced by half to make a syrup. Return pears to syrup until ready to serve. TOPPING: Mix all ingredients together and chill. TO SERVE: Place 2 pear halves on a large plate, spoon over some syrup and top with a dollop of cinnamon cream.
