Poached nectarines with maple syrup

    ml
    cream, whipped
  • 125
    ml
    natural yoghurt
  • 4
    firm, ripe nectarines
  • 500
    ml
    orange juice
  • 60
    ml
    sugar
  • 1
    vanilla pod, split
  • maple syrup to serve
 

Method

 
Mix cream and yoghurt and refrigerate until ready to serve. Place nectarines, orange juice, sugar and split vanilla pod in a saucepan and simmer over low heat for 10 minutes. Remove nectarines from saucepan and place in dessert bowls. Drizzle with maple syrup and serve warm or cold with the yoghurt and cream mixture on the side.
