Poached chicken with watercress mayonnaise

    large chicken breast fillets
  • 450
    ml
    chicken stock
  • 60
    ml
    white wine
  • 2
    bay leaves
  • 5
    ml
    sugar
  • 5
    black peppercorns
  • SAUCE
  • 1
    large bunch watercress, washed
  • 190
    ml
    thick, natural yoghurt
  • 45
    ml
    good quality mayonnaise
  • 5
    ml
    lemon juice
  • salt and milled black pepper
 

Method

 
Wipe chicken breasts with a damp cloth. Bring stock, wine, bay leaves, sugar and peppercorns to boil. Add chicken breasts, reduce heat and simmer for 4 minutes. Turn and simmer for a further 4 to 5 minutes, or until done. Breasts should be moist and slightly pink at centre. Remove from pan and allow to cool. SAUCE: Purée watercress to form a smooth paste. Stir in remaining ingredients and season to taste. Chill and serve drizzled over moist poached breasts. TOTAL KILOJOULE COUNT: 5 335 kJ (1 275 Cal). A portion: 1 3335 kJ (320 Cal).
