Poached berry meringue

  • 500
    g
    frozen berries: assorted berries, mulberries or raspberries
  • 125
    ml
    creme de cassis liqueur
  • 60
    ml
    brown sugar
  • 6
    egg whites
  • 125
    ml
    castor sugar
 

Method

 
Preheat oven to 180 ºC.
Place the berries, liqueur and brown sugar into a 20-cm ovenproof dish.
Bake for 15 minutes or until berries are syrupy.
Beat egg whites and sugar until thick and glossy.
Pile the egg white mixture on top of the berries.
Return to the oven for 15 minutes until the meringue is golden.
Serve warm with cold vanilla ice cream.
