    self-raising flour
  • 50

    desiccated coconut
  • 75
    g
    soft brown sugar
  • 125
    g
    butter, softened
  • 2
    large eggs
  • 5
    ml
    baking powder
  • TOPPING
  • 275
    g
    red plums, halved and stoned
  • 275
    g
    greengage plums, halved and stoned
  • 15
    ml
    soft brown sugar
  • 15
    ml
    desiccated coconut
  • icing sugar to dust
 

Method

1 hr
 
Set oven to 180 degrees C.
Place the cake ingredients into a bowl and beat until smooth.
Spoon mixture into a greased and lined 18 x 23 cm cake tin. Arrange the red plums on top of the cake mixture and scatter with coconut and sugar.
Bake in preheated oven for 1 hour or until cake mixture is well risen and golden.
Remove from oven and allow to cool. Remove from tin and carefully remove baking paper. Dust with icing sugar and cut into slices.
